Transferring hard drive information on an Xbox 360.?

I'll buy an Xbox 360 Elite to replace my arcade version, I want the HDMI port, you see. But how can I get information from the arcade to lose the hard drive (20GB) to the new elite hard drive (120GB)? I do not want my saves ... etc. Yeah that would be obvious would not it ... I want to keep the 120GB HDD!
